Hi! I'm currently overwhelmed with orders and at this point, I cannot take any more orders. I would love suggestions on how to handle this situation. Should I remove (more like deactivate) my listings, or should I update my listings with the info that I'm unable to process anymore orders at this time? What would you do? Thanks for any advice!

Yes, just go into vacation mode or deactivate all of the Valentine's based items - you don't really have to deactivate all of your items.

Put your shop in vacation mode with a message you are catching up with order at this moment. Customers will still see your shop banner and the message!
